Have a great weekend!

Good morning or afternoon depending on what end of the world you are. I woke up in the mood of cooking something light, healthy and beautiful.

So today i made a rice pudding a little bit different. You can try it tomorrow and delight yourself with some rich flavors and great colors and tastes.

You will need:

1 cup rice
1 small pack of raisins
1/3 cup of coconut cream
2 tablespoons of coconut flakes
juice of 1 orange
few drops of vanilla extract or vanilla sugar
1 tablespoon of honey
Orange zest

For garnish i used:
Mango
Strawberry
Kiwi
Almonds
Passion fruit but of course you can use any fruits you want.

Precook your rice normally with water and add the flakes of coconut, raisins and honey. When it's almost cooked add the coconut cream, orange juice and vanilla extract and stir normally until is cooked, add the orange zest at the end. If you don't have coconut cream you can add instead milk and butter.
Place it in a bowl and top it with the fruits and crashed almonds and some mint leaves . If you need more honey you can add by taste and...
Voila!!!

I enjoyed mine with my favorite tea at this moment, the brown rice green tea.

Bon Appetite!

Sunday spoil

Good morning Morning Sunshine readers!

And as i did last weekend, this weekend is the same, tasty, yummy breakfast. I like to eat healthy during the week and spoil myself during the weekend.

This week: French Toast with fresh fruit!

Simple and tasty!

Ingredients:
2 eggs
1/4 cup of milk
1/5 spoons of sugar
cinnamon
vanilla essence or sugar
8 slices of bread
3 spoons of butter

For the topping: i used 4 strawberries, 1 tangerine, 1/3 of a mango, 1 passion fruit and some blueberries, 1 teaspoon of honey.

Directions: whisk the sugar together with the cinnamon, vanilla sugar, 1 spoon of melted butter and the milk, add the eggs and mix all the composition well. Put the other butter in a pan and heat it up. Dip the bread into the mixture and fry it on each side until its golden brown.
Serve it with maple syrup or honey and fruit as i did.

It went pretty well with a Caramel Macchiato ;)

Bon Appetite!
