Pancakes for a Good Sunshine Morning



Good Morning Sunshine!

I'll be very short today since i bombed you with 2 posts yesterday :) I tried yesterday a new recipe that it's very easy to make and very tasty to eat. It's a Jamie Oliver recipe for pancakes.
And since it's Sunday it's a good way to spoil your partner with a portion of this and why not spoil yourself. :)
It's easy, it's tasty and can make you morning more sweet and colorful. :) isn't that great?

Ingredients ( 4 servings)

1 egg
1 cup of flour
1 cup of milk ( i used liquid yogurt)
pinch of salt
pinch of baking powder
4 spoons of fat natural or vanilla yogurt
100 gr of blueberries or black currant
vanilla sugar
olive oil for frying

Crack the egg in a bowl and whisk it well, add the flour, milk, yogurt, the pinch of salt and baking powder and vanilla sugar.  whisk all well until it gets smooth and nice. Add the blueberries or black currant and mix it all ( the blueberries give a bit of acidity which gives a good juiciness and accent to the taste. Put the pan on a medium fire with a spoon of olive oil and pour with the spoon the paste carefully spreading it around making round shapes on the pan. Let it fly 1-2 min until bubbles appear on the surface and then flip it on the other side.







I used condensed milk, strawberries and blueberries as a topping.  They came out soooo yummy...finger licking.:)
